Rustic Pasta with Roasted Broccoli & Mushrooms
Quick & easy, but tastes gourmet!

1 head broccoli, washed and chopped
1 tsp extra virgin olive oil
1/2 tbsp Italian seasoning
8 oz penne or rotini pasta
8 oz mushrooms
2 tbsp butter (or vegan butter)
1 tbsp minced garlic (2 cloves)
Juice from 1/2 a lemon
Salt & pepper, to taste

1. Preheat oven to 400 degrees F. Toss broccoli, oil, and Italian
seasoning. Spread on a baking sheet and roast for about 20
minutes, flipping occasionally.
2. Cook pasta according to package directions.
3. Heat butter in a skillet on medium heat. Add mushrooms and
garlic and cook for about 15 min, or until slightly browned on
outside. Stir often.
4. Combine broccoli, pasta, and mushrooms and top with lemon
juice and salt & pepper. Consider topping with Parmesan cheese.
